After 35 years as an executive chef specializing in Latin-fusion cuisine in Texas, Donald took early retirement to pursue his lifelong passion for exploring the connections between food, music, and history. He and his wife María relocated to Valencia, Spain—her ancestral homeland—where they now document their cultural explorations while Donald works on a cookbook about the musical influences on Spanish colonial cuisine throughout the Americas.
